Brass nuts made an excellent suggestion tonight.
His idea was to do a fixed amount of sushi, then sell it à la carte with a guaranteed profit built-in.
To make that fly you just make sure you actually underestimate quantities needed and when it's done it's done.
If you get the response you need for the $30 by-ins, just go for the wristbands for that crowd (could still be set at a fixed amount) and do a hybrid of the two approaches to accommodate a fixed number of per piece, à la carte for walk-ins.

I was thinking something similar. will have to ponder but it might just work.
for many of the fests especially the last few I've done a lot of raw fish and a little rice. We'll have to up the carb content - which means we feed more for less.
and yeah... when it's done it's done. We feed the $30 folks early and what's left over we a la carte. though as long as there is rice and carrots around there's food to consume... and that part is cheap enough...
it's that $400 box of fish from honolulu (that I can't wait for)

After consulting with a few folks on this we have a plan.
You have two choices.
1) cough up $30 before the event (read: before I buy supplies) and you'll get the typical all you can eat sushi. That'll run until about 6:30.
2) after 6:30 we go à la carte. $10 for a plate or something like that.
keep in mind the idea is to run out of sushi/food so if you plan on having it for a filling dinner option #1 might be the best route for you.

I'd pay whatever cost you need above $30 in order to use paypal - it'll cost me more than $30 to even find a paper check. $33? $35? I don't care so long as I don't have to muck about with paper, stamps, mailing, etc.
