I did not really think much about mustard until I tried Boetje's.
Prior to that, the best mustard I had was what I remember getting at the local bratwurst stand when I was stationed in Germany during the early 80s.
After getting married to an Iowa Girl I was introduced to the wonder of Boetjes, which is made in Rock Island, Illinois (almost Iowa). For us there is no better way of adding spice to a sandwich or pretzels, a rib BBQ or just plain clearing the sinuses than a dab of this stuff.
What's your favorite, and why?

Beaver honey mustard. It's close to some sort of hot German/Chinese stuff.

I don't use mustard enough to have a preference. But I do like the ones that have the little round seeds in the mix.

I'm experimenting with Boetje's in my BBQ sauce. I'm making pork ribs tonight and marinated the rack 'O ribs with the standard yet secret dry rub + vinegar + BBQ sauce ++++ a big tablespoon of Boetje's. The smell right now is making my mouth and eyes water.
I'm impressed with what I see of the other favorites posted here. Our Boetje's is a local favorite, but it seems every local has theirs. I must confess, I like'em all...common yellow, sweet honey, fancy "excuse me" mustard, but my favorites are those with the little seeds. I like that effect that's similar to an ice-cream headache when you know you've had too much of the good stuff.

hey there bill, say, thanks for the share...
i don't get to shop around much, but i was glad to find this:
it only has mustard seed, tumaric and vinigar... no "natural spices" or any other "added stuff":

(dont now any more about the company, etc, will have to check)
(sells in this micigan area)
they have a few varieties, but i get the one THAT HAS NO "natural spices" or "natural flavors" added (being that those are approved "code" names for MSG
*though, i do love fancy mustards, too, after i first check the ingrediants... i just dont get to look for any around here and actually cannot afford them...
sure do LOVE to see all the fun brand names, etc, though... thanks!

I was gonna say all mustard is good, but then some are better than others, right?
