I ordered most of the frozen supplies needed for SushiFest IV:XX '07. My freezer is stuffed with unagi, ikura, sweet shrimp, etc.
On top of that I ordered a bit of fishes for this weekends trip to the top of the Mace to celebrate the 50th anniversary.
After trying many times I finally acquired some Kona Kamapachi (farm-raised Hawaiian Yellowtail [the farming method is totally awesome!]) with the order.
Here is poor Freedy waiting to get hacked up:

This fish was termed tonight by at least four people as "the best sashimi they have ever had".

It's really similar to Hamachi. Light, sweet, rich and delicate in texture.

LMAO! It figured you'd enjoy hacking up fishes.
The way I see it is that Saturday I won't be climbing. I hope/plan to spend the day with anyone interesed in learning about sushi/slicing/dicing/preping/decorating. I figure we start the day with Pancakes and Cowboy Buttholes, then maybe we can do some yoga, then move to making sushi and hacking up Kona Kampachin and rolling charlie into something yummy.

Catch of the day, huh? It seems there are barbless hooks at play here - I keep getting released.
I found out last night a Butthole Cowboy is a real meal. We'll make some! Cut a hole in the middle of a piece of bread, put it on the grill, break an egg into the middle of it and cook. I wonder how tofu would work in there?
dirt: I think the little fishy is blushing at the fact it's being photoged.

Those fish farms are pretty cool. Sustainable I believe. Did that come from the submerged net types offshore? We have a few off ewa here on Oh-Wahoo. A few years ago there was an ocean science convention in town and they wanted to hire our sub company to take them on a dive around them. We brought the sub out there but the logistics of getting a couple hundered phd’s an hour down the coast was too expensive for them and it was scrubbed. At least we got to dive them. They only had menpachi here.
Well I am looking forward to my little jump across the pond, great sushi, climbing and hanging.

Wil - yeah, sustainable and all sorts of other techniques. As most of us know not all fish farming techniques are great. The salmon industry sucks ass. But this one kicks ass ™

I got my fish through my regular source - catalina offshore products who gets it from kona blue.
And yeah, they are farming with the big submerged nets. They raise the fish hatch-to-harvest. Pretty cool technology.
