If you do them right they are not bad. You have to watch them closely in the oven or they'll get black real fast.

Saute in coconut oil with slivers of garlic and almonds, throw a can of tuna on it and stir until hot.

Also put it in liquados with almond milk and frozen berries, protein powder and chocolate powder.

Been eating baby kale & baby spinach salads lately...had a really awesome version at the newer West Side Tap Room in Santa Cruz...it had hazelnuts & a nice balsamic. Yummy!

My daughter subscribes to the smoothie method. She likes to add kiwi's to the berries etc.

Love kale, love brussel sprouts.....

There are some things I don't love. Living the simple life up at Tioga Pass I've found that following what my body desires is a great way to go. I eat protein and fresh veggies at 10,000 feet. Eat very little sweets even tho Bob The Baker does some spectacular baked goods they just don't have my name on them. Best I ever feel is living the life at that elevation. Exercise, good food and great friends.

So.....I was trying to say to Jim, sometimes if your body doesn't really want it, don't force yourself to eat it. For me, Body knows Best most of the time.

Kale Kollected - Kut & Paste into your kookbook


Saute it with chopped garlic
Add some good olive oil, and some Braggs amino acids
bacon fat instead of olive oil
Kale needs a frost to be sweet. The hotter it is, the more bitter
kale kuiche
kale sauted with garlic over grilled trout with a side of scrambled eggs
sauteed kale with preserved pickles of all kinds
Raw kale chips
Sautée it with olive oil, garlic, chopped almonds too.
chop it uncooked and put it in some chili or mix it with salad.
add some to cut up roasted butternut squash, with coconut milk/curry sauce

say, i like to stir fry in my wok, with coconut oil
and onions, garlic, and sweet small red/yellow/etc, peppers... :)
*sometimes i set fresh/or slightly fried tomatoes on the SIDE, that
were heated seperately...

you could add any side food, to mix in, as you eat...
meat, etc, or what, sliced almonds, etc??

you can also ADD whatever spices you like, in last stir of the stir
fry, and change the meal, to whatever suits your taste, best... :)

a soup... saute the kale with some oil and spices, add carrots and celery or other vegetables, and chicken broth
Chop it fine with red bell pepper, carrots and whatever else you have. Make a tahini dressing - (tahini paste), lots of lemon juice, garlic, a little water and olive oil, cumin and cayenne. Let it thicken in the fridge. Oh, add chopped garbanzos to the sald, toss with tahini dressing...yum!

You need to steam or at least macerate the kale most of the time, otherwise it can be tough. u can bake it and make chips out of it.

Puree with olive oil and garlic and add to sauces – pesto
bake it and make chips
Throw it in with cooking pasta for the last 4 minutes
Julton: spicy pickled okra is divine! Also, not healthy, but fried okra is sensational.
Deep fried

Add a chopped cup of it to the blender with your fruit smoothie contents. A typical one might be apple, coconut milk, frozen grapes and a cup of kale + some drops of stevia.
I use it in stir fries, stews, salads
I like to finish my dahl with it. Tasty! Simple to do and with the shelf life of kale, one average bunch is usually enough for two of my batches. I agree with the crack characteristics of the chips. I have a friend that makes them on the BBQ. Great for a vinegar style of dip

I made chicken soup on Saturday. I sauté each ingredient separately before throwing it in the soup pot.
By the time the meat is falling off the bones the kale is reduced to little green bits that act more like a thickening agent
I eat it raw, 50/50 mix with spinach to make a salad

Add a nice sliced habanero or jalapeño to your olive oil container. For best results keep adding oil to the peppers and over time add more peppers to suit your taste. Once the concoction ages it will add additional flavor to make spicy kale. Be careful when you heat the oil so the fumes won't burn your eyes

Hey Jimmy, here's my .02:
Saute in olive oil, a splash of wine
chopped garlic, saltnpepper, red pepper flakes
serve with some shaved parm/romano

mix up them greens boy...add in some chard, collards or mustard!

Kale has become another food fad. I like kale but I don't like food fads. I still have customers that want "blackened" salmon. A bunch of burned spices on a piece of fish that needs little or no help to taste really good. Go figure.

Jim,

I finally found a way to eat kale, too, which is to say that I found a way to deal with its excessive fibers and strings. Mince it, and use it in soup, particularly in a thick Tuscan-style white bean soup with, yes, lots of garlic and olive oil.

Or, if you're following the curcumin fad, kale makes a much more flavorful palak aloo than spinach does.
