Donini! Re your request:
Most posters here are city folks, I need a country boy's opinion.

We country boys & girls don't grow kale, ever since our "depression-era" parents found it lacking and passed that fact onto us.

I had never tasted the stuff until having some in a nice eatery in SLC last spring. I immediatly understood why 1960's Bay area hippie/writer/poet Richard Brautigan had mocked kale in his classic book: "Trout Fishing in America."

Kale, yuppies, Starbucks, Apple = fashionable at the moment, but not always easy to enjoy.

Heidi has never grown Kale as an "early-green" in her large garden either.

When it comes to kale, I believe in some healthy self-denial.

I can't always be treating myself to delicious worldly treats, so I chose to deny myself the joy and culinary ecstacy of dining on kale.

But I will live vicariously through you.

Bon Appétit!

I see. So if it's young and fresh and well-tended and not from a city. And there's been a frost. Then it tastes good and can be swallowed without too much jerking back of your head. Kind of like lamb versus mutton or veal versus beef.

While we're on the subject who has found a way to eat mucusy slimy nasty okra?

1. Prepare kale as per any of these recepies – or Google another.
2. Telephone in a pizza to go.
3. Style points for getting pizza delivery guy to take the kale away with him for as little extra tip as possible.

Edit: No one said anything about no okra.

I feed it to a rabbit, then make rabbit stew. Delicious. Oh, goat or horse would work as well.

Julton: spicy pickled okra is divine! Also, not healthy, but fried okra is sensational.

I'll even it eat raw, right off the plant. I don't mind the slightly bitter taste. If your on a blood thinner, ( I'm not), be careful, since Kale is loaded with vitamin K.
The Romans cultivated Kale. It's been appreciated for thousands of years.

I use it in stir fries, stews, salads, and this stuff grows even into snow season!

I like to finish my dahl with it. Tasty! Simple to do and with the shelf life of kale, one average bunch is usually enough for two of my batches. I agree with the crack characteristics of the chips. I have a friend that makes them on the BBQ. Great for a vinegar style of dip

I eat it raw, 50/50 mix with spinach to make a salad. Grows like a weed here. I actually had one plant that kept eating from for several years. We caught a raccoon eating it one night.

Brussels sprouts are awesome too.
Cut em in half, put them on a baking sheet, drizzle with olive oil, salt and pepper and roast them in the oven.

At one place I worked, we used purple kale for a garnish. That stuff would hold up under a heat lamp forever. I don't trust food that is that resilient.

Brussels sprout are really good with Pancetta or bacon.

Kale???!!! I had a tenant who managed to clog a state of the art "garbage" disposal with the stuff, had 2 grinder blades etc. and it couldn't eat the stuff! Must be great for your colon. Peace SteveS.

Jim,
Add a nice sliced habanero or jalapeño to your olive oil container. For best results keep adding oil to the peppers and over time add more peppers to suit your taste. Once the concoction ages it will add additional flavor to make spicy kale. Be careful when you heat the oil so the fumes won't burn your eyes. We have a bottle around for those boring dishes or when you need to spice things up.
