Mike Ness (of arguably the best punk band of all time, Social Distortion) does Bob Dylan's "Dont Think Twice"
Mike actually did a solo album called Under the Influence that are all covers of old country songs. His solo album Cheating at Solitaire is full of great originals and a few covers. He even got Bruce Springsteen to sing back up on a few tracks

Call me crazy, but I'm still holding out for Leonard Cohen to cover Sister Christian by Night Ranger.
Think about it. Really.
I sing it in my head all the time but the real thing would be so much better.

Highly recommend checking out the album Re-Covers by Yat-Kha. Tuvan throat sing meets Led Zeppelin (When the Levee Breaks), Joy Division (Love Will Tear us Apart) and much more.
Other wild cover is Luther Wright and the Wrongs doing Pink Floyd's The Wall as country music.
Just incredible stuff.
