Toadgas, there are very few. Of those, almost none of them won for research done in Canada.
Richard Taylor won for experimental evidence of quarks (from Alberta, won at Stanford).
Rudy Marcus won for scattering (I think?) - from Montreal, won in Cornell (?)
Conversely, Gerard Hertzberg escaped Germany and won in Saskatchewan.
Edit: A complete list is here: http://en.wikipedia.org/wiki/List_of_Nobel_laureates_by_country
You'll have to add in Dudley yourself.
Also, Marcus was electron transfer at Caltech.

What about our own Pass The Pitons Pete aka Piton Pete!
Dudley Do Right was conceived, written, voiced and drawn in Los Aneles by Jay Ward Studios. He is totally a Hollywood product that simply monopolizes on Canadian stereotypes.

Herman 'Jackrabbit' Smith-Johansen, Canadian-Norwegian cross country skier.
He lived in Canada for most of his life, and lived to be 111.
There's a cross-country ski program across Canada where the tykes are called Jackrabbits.

Samuel Champlain
For the record, Laura Secord is known for the line of chocolates, but that is not the reason she is famous. I'm a little rough on my history, but she lived in Southern Ontario (the town of Ingersoll is named after her) during one of those war things that often happened (possibly 1812?)
Anyways, she was married to a commander of the British army or something like that (hence the name change) and overheard a plot from the enemy to ambush an unsuspecting strong point (or something like that).
She took a direct trail through a swamp, braving rattlesnakes and quicksand in order to warn those who were in danger. Or something like that.
So if you have to classify her under something, possibly Canadian Hero?
