Over the weekend of 4/20/2007 "we" are having a SushiFest for climbers. We'll be making/eating sushi for 24+ hours (two nights). We've secured a group campsite some place in southern Utah (Vegas is the closest airport to fly in to) - it's (mostly) paid for out of my pocket as of right about now. The exact location won't be disclosed on this forum (to reduce the possibility of party crashers).

We're requiring all intersted parties:

1) email me (use the subject: "SushiFest" and anything else you might want to add) - nature (at) sushibynature.com - or the email listed for ST will work. Please provide the following information:

* real name
* supertopo name
* phone number
* if you are driving/flying
* where you are coming from (so that we might help coordinate car pooling)
* if you play poker (limit or NL tourney)
* any fish/menu requests
* if you can help in rolling
* if you have friends that will be joining you

(I'll send you an email back with my mailing address so that you can:)
2) Send me $10 per person in your "group" (parters/wives/gfs etc.) to reserve your spot. This needs to happen ASAP and it is non-refundable (sorry). Once the exact head count is calculated we'll know how much camping for two nights is. You'll pay exact camping fees (should be $3 - $5 per night per person) and any extra funds will be diverted to the fish fund.

Edit: I was asked if I could accept PayPal. I use to have a PayPal account. I closed it after they allowed me to be ripped off for $100.

3) as the date approaches (3 weeks or so before) we'll have a head count and we will be preparing the menu details. We'll then need your money for fish. This will be refundable. Figure you'll end up chipping in about ~$25-$30/person/night for the goodies.

Other details:
* There is good, moderate road side camping very close.
* it's a nice campgound with showers, etc.
* Dogs are cool except will need to be leashed in/around the campground.
* though we have selected a good spot for this to stay out of trouble, keep in mind, this is Utah. Transporting alcohol across their border can get you in trouble. Transporting other things can land your ass in federal prison. They have state run liquor stores that have conservative hours. They sell 3.2 beer in the stores.

Menu (this is by no means complete - requests are more than welcome).

Maguro - yellowfin (fresh)
Hamachi - yellowail (fresh/frozen - required by law to be frozen for parasite destruction but I can get some stuff fresh [maybe] and don't think it's an issue to not freeze it)
Toro - bluefin tuna belly
Ebi - cooked shrimp (probably a lot of this)
Unagi - marinated, cooked freshwater eel - YUM!
Sake (?) - fresh-frozen salmon (in this case you really do want it to have been frozen for parasite destruction)
Shiro Maguro - Albacore (comes in frozen - I usually use it for spicy tuna)
Ika - squid
Kani - crab
Tobiko - flying fish roe
Ikura - Ron's favorite - Salmon Roe
Uni - mmm mmm mmm.... Sea Urchin Eggs/Gonads :-)

Other possible items:
Saba -
Tai - red snapper
Smoked Salmon
Smoked Albacora
Tako - Octopus anyone?
Smoked Lake trout? hmmm.... OK.

Plus the assortment of veggies etc.
Tofu
Asparagus
Cucumber
Carrots
Avocado
Eggs - for tamago
Miso Soup
Edamame (soy bean pods)
Sunomono (cucumber salad)

We'll tempura stuff. We'll roll stuff. We'll slice stuff. Hell, who knows what kind of crazy looking sushi we'll come up with.

The list is adding up fast. There is easily 25 folks that said they are 100% - but only one that is paid (me!). We can have 50 at the group site - depending on how many folks we end up with that can twist phatties, 50 (right now) is about the max.

ADDENDA

I've never heard of anyone being hassled for carrying in a (sealed) bottle of alcohol.
Its not a National Park so federal prison side trips are highly unlikely.
We do however have the Purgatory Correctional facility close by where you can learn how to pick up chicks from current resident former FBI's most wanted polygamist Warren Jeffs.

Nature, are you nuts? We can't feed these people in style for only $30/person per day!

Las Vegas is the closest major airport.

The actual CLOSEST airport is St. George which is served by the more expensive local puddle jumper (from SLC or coCal or soAZ, but NOT Vegas)

Cedar City UT is next, also a puddle jumper but served from Vegas (although it doesn't make much sense to fly to Cedar then drive an hour vs 2 hour drive from Vegas).

If you're going to Vegas you can probably pool with those more local. Same for SLC.

Anago - I have a request for Saltwater Eel. Anyone else interested? (I've never had it strangely enough so I'm interested [and I can get it from another source of mine])

Ron - the word MAJOR is rather critical in my statement

Wasn't being critical, merely helpful.

I for one prefer unagi (freshwater) to anago, but that's just me.
It IS one foodsource that should become MORE abundant as it is one of the supercompetitors that will win the Darwinistic race instituted by MAN'S (either natural or unnatural depending on perspective) hand.

They are now running wild in Florida where there are no natural controls for this exotic.

Old story, new player.

So we might as well develop some tasty recipes, huh?

Mmmmmm, if your albacore is fresh why ruin it in a roll? It seems to be hard to get really good albacore because I only know of 2 or 3 sushi bars in my area that have albacore I want to order. The rest is more appropriate in a roll. Carry on.

The albacore I get is "sashimi grade" and it comes to me frozen in a "fresh-pac". Every once and a while it comes that way and has a good enough texture to serve as sashimi. Otherwise I just chop it up and add my secret spicy sauce.

We'll pretty much do any sushi we can any way we can provided with have the fish.

I disagree with you though on the others are good for rolls. The Yellowfin I'll be getting is fantastic and pretty much the only way to fully appreciate this is nigiri or sashimi. Toro is a sashimi only rig - that stuff is off the hook delicious if you ask me.

recipes are a good idea. OF course, I'm more into just trying to flash new roll ideas.

The Uni is very good.

Of course, nothing compares with Uni topped with quail egg.

Any requests yet for Kazunoko?

To me maguro beats toro, too much fat.

I'm working up some recipes;

tako sunomono
unagi with shaved almonds
painted bird brochettes
spicy muscle dumplings (not to be confused with Crimpie's nickname for Bachar)

And for sure there will be;
Piton rolls
Maculated rolls
Werner rolls
Jello rolls
gnome rolls
Largo rolls
DJ rolls

IT would be good to get some Shiso

I can get quail eggs from the same place as the Anago.

Oh Ron... you trolling for me "bait"?

Where's the Crimpie Roll?

Tako Sunomono sounds good but maybe we can use my veggie sunomono and add the Tako later? Send me the recipe and let's consult. I'll be making sunomono on Wednesday of the week - it's much better if it ages a few days.

My favorite uni prep is to lay the uni on a slightly scooped out half of a lemon. You gently scrape the uni off of the lemon with your top teeth into your piehole and it's instant 'taste of the sea.' Really nice.

St. George is definitely the ticket. Ron, will you be running a shuttle?

My car is little more than a motorcycle with an interior. But anyone who flys to St. George can probably catch a ride for the last 27 miles.
But anyone that can AFFORD to fly to George can probably also afford to rent a car.

Cars might actually be cheaper in George since Vegas flip flops from most places being costlier on weekends.

We can probably make multiple salads (how about ohitashi or tuna tataki) as well as multiple soups (miso? hot and spicy chicken?), but it would help if people who are actually attending would post their preferences to get the ball rolling.
We can then investigate availability and fine tune it later by email.

Am I the only person who still dares to eat shellfish?

trader joes has instant miso soup in packets that are pretty passable, especially if you dice green onions and tufu to add. we have them for breakfast on cold climbing trips, like a super hearty tea w/ lots of salt.

my preferences:
all tuna types
uni (plus quail eggs? on a camping trip? sweet...)
love avocados, will eat anything green just in case it might be an avacado...
taco might be best in a salad, like a poke hybrid? otherwise, i'd try it, but i'm unlikely to pick that up if there is something softer right next to it.

i'd be strongly in support of taking a conservative approach toward parasites, etc., and that may color my view of eating raw shell fish on a camping trip.

if you get 50 people, how exactly are all 50 people going to contribute to the labor of feeding 50 people? maybe there ought to be a 50% discount for people who roll up there sleves for a few hours, to be covered by those who climb more and/or either lounge or are unable to find a free sushi rolling station? (for the record, i'd rather climb longer hours and pay extra, and don't want to cut climbing short to end up standing around looking over people's shoulders while trying to find a way to pitch in).

what ever you decide logistically is fine w/ me- nice effort fellas.

I wouldn't have thought that I'd have my best live scallop in Sun Valley Idaho but did along with the late Greg Smith ten years ago.
Mere seconds from tank to mouth.

Still nothing beats the live clams I ate as a kid in the harborside bar in Edgartown, Mass.
Those 5 summers on Martha's Vineyard were great. The whole family would wake up at 6:30 drive the half mile to Katama Beach and get an eye opener by being tossed by the surf.

Sometimes grab some clams to open at home.

Matt, I didn't say RAW for the sushifest. and while we're on it saying you'll "eat anything green" on THIS forum is probably ,..uh,..er,..ill advised.

Edit:
There will be numerous tasks delegated to those best able to perform them. We'll need designated drivers, camp assistants etc.
Nature and I are organizing this and we'll make up a crude duty roster of volunteers. But this will be anything BUT some kind of regimented event. No doubt people will just pitch in the same way that they'd be likely to offer a TR to fellow attendees.

But to be successful some things need to be done.

So - what time, about, would be a good time to arrive in order to help out with the work to be done?

The 20th is Friday - so I'm assuming Friday is the first sushi night?

I am going to be in JTree beforehand, so will plan my travel to arrive to help in whatever way. I'll have the rental car, and will have to figure out whetehr to return it in LV and hitch a ride, or be a driver and pick people up along the way(nondrinker; that might be a good idea).

Sign me up for sushi slaving. Although I haven't cut sushi before I know my way around the knives and trash cans.

I have access to recycles/biodegradeable/compostable/PLA plates and cutlery. Let me know if I can help out with that. The world throws away over 3 Billion paper plates a month! Let's not contribute to that sh#t. Better yet, tell people to bring their own plates/cups/cutlery/mugs and side-step the whole situation.

I'll eat shellfish. I can get live Abalone (Awabi).

The trader joes miso, though good, is rather expensive. I'll be getting one or three different miso bases in bulk. I'll be doing the dashi soup base (both with and without the bonito). Various soups and salads is a good idea.

I have a great tataki recipe for seared tuna.

Lot's of variety and new ideas is a great way to move this thing. We all have favorite ideas that we'll want to try. We have have a ton of time - so, if it's basic sunomono one night and taco sunomono the next - great!

I get it for about $8/lb cooked but there is a 5 lb min - that's a bunch of octopus

i'd love to get some murigai (geoduck clam).

Here's where most of the fish will come from:
http://www.catalinaop.com/Default.asp?Redirected=Y

they have softshell crab - wooo!

kuan - a birthday roll it is!

Matt, don't worry about the fact that we're "camping". Most of the fish, especially fresh, will get shipped out on Wednesday or Thursday overnight FedEx. I've done enough outside events to know how to keep things clean and sterile (and the fish nice and chilled).

untensils/trays/etc... I have a bunch of all of that I use for caters - most of it is plastic. I think all the chefs have their own cutlery. Probably a combo of folks bringing their own stuff, having some paper products , and using some of my stuff, etc. will be a good direction.

AAAARGGHHH!!!!

I totally forgot that one of my clients has booked me 2 friggin' months ago for a damned 10 minute walk at 10 friggin' pm on either 4/19 or 4/20....I am so irritated. They are hyper-emotional people and I can't have an assistant do it. If I even asked to have my asst. do it, she'd get ridiculously upset, and cancel whatever plans it was they made for the night. And then apologize every time I saw her for the next 3 months for causing me a problem.

The only good news is that she had said "Friday, 4/19"....and the 19th is Thursday. So, I am hoping she has the day right, and not the date. Then I can do the stupid walk and jump on the plane Friday morning. Of course, my JTree portion of the trip will now have to come after the sushifest. Or....Jtree earlier and no sushi fest for me.

For a 10 minute dog walk.

I guess my dates for JTree will be...head down to Cali on Monday(unless I can get someone to come with me on Sunday nite; I just don't think that Kelso drive is a good idea alone at night) and saty until.....let's seeeeee.....I can't decide. I gues I'll get back on a plane on Thursday, 5/3.

I'll be in JTree for my birthday on 4/29 - happy birthday to me!

In addition should the Sankey family be able to make it we have two resources

Quick update:

The list is filling up quickly. Anyone that has emailed me and said they are going is essentially on the list. If I didn't email you back with my address drop me an email and let me know. I'm won't have much email access the next few days.

I'll have a solid count in a week but right now I expect there are 35 confirmed and paid people. If I don't have a check from you by the end of next week I'll move you to the "interested" list. What happens with that list will depend on the total head count moving forward.

There's a chance we can expand a bit (get a few more campgrounds). In the interest of how many we can feed we'll probably not expand much but there is that possibility.

I'm considering getting Real Wasabi Rhizome - any objections? (it's not cheap)

I never would have realized this if we hadn't had a tight squeeze for time one year to get to a friend's wedding, but you can often fly (United or Delta) pretty reasonably right into St. George. Of course, extra cheap fairs are usually available for Vegas that make it cheaper to do the extra bit of driving, but if you're paying full fare for Vegas it's worth checking out.

The $300(plus) fare is not an issue, though it is a bit higher than I expect. I am not purchasing the ticket now anyway. Will probably do so in the next month or so.

I was just giving an example of the difference on price between going into LV and the other place. And, of course, the layover "adds" to the price of a ticket, in my opinion. I know that for many places, layovers are unaviodable, but one of the "perks" of NYC is direct flights to so many destinations.

Ebi, Hamachi (or Hokkigai, not sure which, leaning toward hamachi but possibly something entirely else) nice presentation with Shiso rosette, & lemon slices, Yuppi-Maki (CA Rolls with imitation Kani)...

Nice Daikon sprouts, too! not to mention the shredded Daikon bed for the rosette!

"As the frogs say... the first taste is with the eyes..."
Hmmm... seems to me that frogs have awfully long, sticky tongues, and the eyes are primarily for depth perception to aim the tongue... otoh, I guess that makes the statement correct... If the eyes can't taste it, the tongue never will!

nevermind....

edited to add: Apologies if the kani is real... Hard to tell from this distance...

I will be flying in from DC. The fares to LV look cheapest (~$225). If we coordinated the arrival we could probably share the cost of renting a larger vehicle (bronco or something similar) and it would come out to be similar to the shuttle cost and have room for the amount of gear some of us will have. I think I get discounts with most rental companies through work.

Only a few of the routes in this place are very gear intensive, but if you're coming for Zion whole 'nother story.

The roads are all graded and four wheel drive is overkill, but renting a van could be really cheap and effective for a large enough group.

Hey Brutus,
looking forward to cutting with you.
"If the eyes can't taste it, the tongue never will!", are we still talking about the same thing?...

Happie, if you're around, I've given this some thought. You shouldn't plan on flying. Instead, you need to borrow that exotic
Ferarri roadster, and drive. The roadtrip alone, would be almost as much adventure as Fugu!

Also you could finance your trip by letting us each take it for a drive @$1 a spin. I'll commit to at least two, if I make it out.

What could go wrong?

Now that sounds like a plan.....I could even bring Teddy along then, sitting on my lap with paws in the 10 and 4 positions. He'd need to have safety goggles, of course.

10 and 4?

What happened to his right paw?

Teddy doesn't do the 10 and 2 position, he's a dog with attitude, and keeps his right paw low like a dude. But got to have the left paw up in sight, in case a homedog is rolling past; then he gives the "barely perceptable paw lift" as a cool dog greeting.....

How's that for avoiding admitting I am gettinsenile and mix up words, thoughts, phrases, and facts on an increasingly consistent basis?

Oh yeah - It is occurring to me that, since the sushifest will now be at the start of my trip, maybe I should stay in the neighborhood a few extra days and climb some new areas..... If anyone is interested in hanging with me, send me a PM. I am thinking maybe staying the Monday and Tuesday or so, and then heading to JTree on Wednesday.

Looks to me like Nurse Ratchet and I will be hitting Red Rocks before the fest, so unless I can find a source in Las Vegas, I won't be able to bring Shiso. Any news whether Nature got any of my three checks I sent?

Edited to add: looks like a few good possibilities for getting Shiso in Vegas.

(dropped the first two in the mail without stamps... talk about senility!)

Really bummed that I can't make this!!!

But it also occurs to me that perhaps in addition to his sushi business, that nature should set up food photography business on the side!
