19 pounds of Big Eye Tuna - fresh and FedEx'd in from Honolulu (it was probably caught Monday or Tuesday of this week).

That looks like Missouri Big-eye Parrotfish to me. As for the piscean entity in the foreground, I have no idea what kind it is.

In the interest of being a better person and spreading the good vibe I offer the following.
Wil - No problem. One day I hope we can sit down and have a beer and you can tell the whole story.
Ouch!: It's a good thing Crimpie doesn't do the food buys for these events.
PMB - good luck on your journey.
TKingsbury - we need to talk :-). I did get a fair amount of feedback from folks going to the Bugaloo and it sounds like it could easily be worth my while. I may have to plan a visit up that direction in the spring. We can make it happen. 40-50 people for two nights of sushi at $30/night plus what ever it takes to camp (and maybe a little extra to cover fuel costs) and it can work. I'm sure eKat and Blinny would flip out at the idea!

OK folks, here is where the better man steps to the plate. If you've followed this story I'm sure some of you are just wondering how I was going to react to PTPP's inquiry.
PTPP - in case you do not recall I am good friends with all three members that you joined on The Muir. I have expressed my feelings to you directly in the past. My feelings are similar to the ones that my three friends hold. But with that said, I will attempt to move beyond my not-so-positive opinions of you and invite you to the sushi bar. I am working hard at being a better person and in that spirit, AND in the giving spirit of the entire Facelift, you are welcome to join us. Your friend Fishy and his wife are joining us. It is an honor to have folks travel half way around the world to join in on the Face lift and to step up to my sushi bar (they are setting the record for the latter - beating out Happie from NYC by a loooong shot).
I will not do so, though, without pointing out that it really is too bad you have to ask - the information you ask for has been sprayed all over this forum for the last month and a half. But I won't make you go looking.

Yummm, albacore that's the correct color. Doug, is it down to the particular fish or the particular cut of albacore that makes it more pink or less?
I've also lately become quite fond of albacore belly.

nature: Perhaps Pete would be interested in helping with the FaceLift. It isn't exactly a prerequisite for attendance at the sushifest, but he's spent a great deal of time in the Valley, and could certainly help.
Edit: Anyway, I thought it was Fattrad we were supposed to gang up on.

Me? Why me? Cuz we're all buddy buddy now? LOL! I'd have to assume Fishy said something. As you state, he spends a lot of time there - maybe he figured it out?
Jan: The color depends on two (well, sorta three) factors. The type of fish and the cut on the fish. The belly cut chu-toro and o-toro are higher in fat content that the loin or back cut. This is due to the fact that it's the muscles on the back of the fish that are used for swimming. More blood reaches this cut (akami) and thus it gets a redder color in the Bluefin Yellowfin and Big Eye. The albacore is a smaller Tuna (and is in the thunnus genius) while the Yellow tail (bonito, etc.) (AKA hamachi) are only in the Tuna family.
Albacore is typcially called "white tuna".

While the bonito is in the tuna family, I believe the yellowtail
to be in the Jack family.
By the way, do you ever get Kampachi (amberjack)? Its flavor
blows me away.

Yep Doug, I know all that and more about tuna. I just happen to get THE BEST albacore at one particular sushi bar here and it is always pinker than anywhere else. I always wondered if he picks better fish (yes, whole fish) or cuts from a slightly different area of the fish. He is also the one that does albacore belly along with several grades of toro and some of the best yellowtail belly you have ever had. I have gotten quite addicted to some of the smaller fishes like amber jack and island and Hawaiian mackerel too.

Geez Jan, you asked those questions like you didn't know :-). Testing me?
scuffy_b - looks like you are correct. Yellowtail is in the jack family. And bonito is in the Tuna family. And yeah I do get Kampachi sometimes. A while back I got a whole fish Kona Kampachi.
