They are everywhere around here. They tend to really grow well along the road sides because that's where the water builds up after rains. They are also called Coyote Gords.

I believe its a type of Cucumber. Makes a large yellow/orange flower prior to fruiting. I hear its nutritious, and Natives had a way of preparing it and eating it.
