hey there russ, sooze, and all... say, what wonderful food stuffs you all are cooking... :)

sure love garden fresh stuff...

this year, i finally got some plants with the help of, first, my daughter, then the neighbor.. .so i had tomatoes and then broccolli to grow---and---it all actually DID grow... oh my... :)

then from the neighbor's yard, i was invited to get more tomatoes, and lettuce... and some yellow squash...

tonight i even got a pumpkin that some ol' racoon or rabbit had been ruining.... i will make soup or pumpkin pudding out of it... :)


well---in texas, a lot more stuff grew... but i as very happy to see this little crop here, for sure! and there was NOT much sun this year, to worsen it all, so the more the miracle...

*say, as to those with extra eggplants, you may not like this but:

eggplants are good in tomatoe sauce with lentles... like a soup of sorts... nice and simple, though... but good for those that can't buy lots of add-ins...

it is good to add to the spaghetti sauce, too, for those that like spaghetti, etc... (most likely any sauce, pizza, too) just let it boil down....


well----sooze, may your wonderful kitchen and your skills, do honors, even more so, for many, and the whole year though.... )
*good cooks are hard to find these days, you know....

(hmmm, except on supertopo, it seems.... there ARE a few others, we are learning of... but not to worry, you are among the best, for sure!)

Thanks for the idea on the eggplant, Susan. I got around to making it last night and it was nice and tasty. New eggplants in this week's share of veggies--it's like the march of the purple plants. That and cucumbers, some of which had to give themselves over to becoming pickles yesterday.

My hubb can't eat wheat, so topped the casserole with black beans and cheese and crisped under the broiler at the end for texture.

Putting eggplant in a puttanesca (wheat-free corn/quinoa noodles) was good too.
