The people we're splitting our CSA share with are out of town this week so we got a double helping. I don't know how we're going to eat it all.. neat to see what's different in yours, Steve.

We have:
eggplant (3 kinds)
summer squash (3 kinds)
string beans
basil
kale
swiss chard
baby bok choy
cucumbers (3 kinds)
carrots
garlic
green bell pepper
some sorta black bell pepper looking thing
banana pepper? looks like a big anaheim chile

Plus from the garden:
butterhead lettuce
spinach remnants
arugula remnants
peas
green onions
carrots
tomatoes racing the frost
some damn halloween pumpkins growing out of our compost

it's like culinary heaven up here except for the pumpkins

anyone have good eggplant recipes other than eggplant parmesan? I was thinking of trying it in a puttanesca, maybe some sort of greek work up too, but have 5 eggplants...

Pewf, nice double-dose harvest. No measurements but how about something like this..........

Saute summer squash & eggplant. Maybe with some yellow onion, garlic, salt & pepper.

Mix in a can of diced green chilies (unless that banana pepper would work?) It will need something, the squash & eggplant can be bland.

Spray non-stick oil in the bottom of a casserole dish and place squash/eggplant mixture inside.

Cover with Bread crumbs, crushed crackers or stuffing mix (whatever you have handy)

Top with grated cheese (again, whatever you have handy)

Garnish with diced green onion and bake.

Those salsas look good. That skirt steak looks even better. I used Bison skirt steaks last month for my Carne Asada/Blue Angels fest. They came in lean and clean and I didn't need to do much prep on them. The flavor was a tad richer than beef and tender to boot. Ghost came by with Mari and gave them a thumbs up. Skirt is my top choice for Carne Asada. Flank and top sirloin are also good cuts. Mangia!

Bend it Nature. Little Sita did well last night in her box. No accidents and went first thing this morning when I put her out. Had Nora puppy-sit when I went back to bed and left them outside.

Lots of leftover vegetable casserole from last night and home made salsa for cocktail hour.

Enjoy the bend-fest, all is well here. Blitzo is passed out in the yard from picking up dog dookey and softballs, maybe I'll check on him.

All baked up....

Ready to grub although I wish it hadn't absorbed so much of the sauce. Tonight's left overs got fresh sauce to top it off...

Tonight... apple pie in the making
