So you want to go to cooking school. Being in the industry, I have a few thoughts on the subject. For me, if I want to hire kitchen help I think of four things, some of which can be found out right away, other need the test of fire.

Firstly, can the person learn and can they listen to instructions? You would be surprised how many have a problem in this area.

Secondly, are they level headed and do they do well under pressure? That crap on the Food Channel about angry cooks is not professional.

Thirdly, multi-tasking. That's the crux. The key to speed.

Lastly is a good assessment of your attitude about serving and working with other people. That's what we do, and we don't always get paid well for it.

If you wanted to work in my kitchen and you did well on those four points, I wouldn't care how much experience or school you had. Now this is old-school and there are a lot of establishments that want that piece of paper, so it's your call. Send me a PM if you want to know any more about the industry. I worked a couple of years in Mammoth running a kitchen, and they have a lot of restaurants per capita and they all need good help.

Very helpful post Wayno, thanks for taking the time to give me all the info.!!!! So much to think about....... :D At some point I guess I'm gonna just have to jump in and go for it....at something.....somewhere. Yikes !

Edit: ekat, just checked the Cool Jobs website. There's a couple I'd jump on in a minute but I have a few more "ends" to wrap up in my slightly "drama" life of late. I'm with you. We should give it a whirl. :D

Following your heart is good advice. I've done it a few times and its worked out well for me.
Not sure if anyone has mentioned... If your heart gives you bad directions, you can always go back to where you came from. Barring something major, it will always be there if you decide your new location isn't for you.

The choice is easy. If you can find work make the move. I like "Bishop Time" -- slow and easy going.

Or why not both? Personally, I love the drive from SD to Bishop. Many adventures along the way. I will never tire of the drive, though I've done it hundreds of times. Time to think, time to dream, time to explore and discover . . .

Lynnie....yer freakin' CRAZY!!! Yer place is paradise! Why would you want to leave that? What's that saying...the grass ain't always greener. Stay put, all the cooks will eventually leave So Cal and then we'll have the place to ourselves AGAIN.

Rent out your place for a bit and test out the waters up there. If you like it the value of your home should have recovered and then you can sell and move to your happy place.

The rent on your home should cover the taxes and up-keep with enough left over to let you rent a small place while you try to find a job and what not.

For those who haven't been there, Lynne has the nicest place imaginable. I was reminded of this once, when I spotted the ladder for her to pick oranges for breakfast juice for our group.
She has this place by Dint of the work she's put ito her life so far.
But life changes, and chapters flip. It sounds like it is time. it will be fascinating to see what she comes up with next.
